The sun is shining and even though it is mighty cold outside and with the BBC’s constant threat of snow (stop teasing us Londoners and just make it happen!) I have spent my week feeling positively… well positive I suppose! I’ve been drinking lots of green smoothies, having a ginger juice shot every morning and eating an abundance of fresh salads. I am, at last, feeling back on track with my health, which after 3 weeks with flu had really knocked me back.
I love filling my body with lots of nutritious foods, especially when they are utterly delicious too. I have decided to share with you my recipe for “no nasties” sesame chicken goujons and avocado chilli cream. This is one recipe that ticks all boxes for health, immunity, nourishing goodness and flavour. It is well and truly p.a.c.k.e.d to the brim with goodness. It’s fresh, flavoursome, sugar-free, dairy free, gluten-free, grain-free, protein packed, high in vitamins and just delicious. You will be fighting for the last chicken goujon and delving your fingers in for the last licks of avocado cream. A perfect centrepiece for a healthy lunch or supper, or even a picnic (if you are in warmer climates), it’s great for kids too as there are no nasty additives. So gather up the ingredients, place that pan over high heat and start getting your hands dirty!
What you need:
To serve 4 or 2 VERY hungry bears
Chicken Goujons:
*350g Chicken thighs (boneless), or precut chicken goujons (if your butcher is feeling mighty kind!)
*2 Egg Whites
*1/2 Cup Sesame Seeds
*1tsp Sea Salt
*1/2 tsp Cracked Pepper
*1/2 Lime
*2-3Â tbsps Coconut Oil OR 5-6 tbsps olive oil
Avocado Cream:
*1 Avocado
*1/2 a Red Chilli
*1/2 Lime Juice
*1/3 Cup Almond Milk OR Coconut Milk (for an even creamier consistency)
Directions:
Chicken Goujons
- In to a bowl separate egg whites (2). Using a fork / or whisk, whisk the mixture until it is very foamy and begins to form peaks very slightly
- Chop your chicken into length strips and place to the side
- Pour sesame seeds and salt / pepper on to a flat surface and spread out (you are going to be rolling your chicken in to this mix)
- Now with you egg white mix, sesame seeds and chicken in front of you take a length of chicken and dip it in to the egg white mix making sure it’s fully coated, now roll it in the sesame seeds until fully coated. Repeat with all lengths (if your egg mix gets a bit “watery” then just whisk it up again until frothy)
- In a deep frying pan over high heat coat with olive oil / coconut oil and once at its hottest place in chicken goujons (Be careful not to get spat at!)
- Allow the chicken goujons to cook for approx 3-4 minutes on each side- (until golden). It’s very important there’s enough oil in the bottom of the pan or else they will burn
- Test one chicken goujonby cutting in half to make sure they are fully cooked through – if not, turn heat down and continue to cook until cooked through
- Serve straight away with fresh spinach leaves, cherry tomatoes, spring onion, avocado cream (for dipping) and fresh lime
Avocado Cream
- Â In to a blender place 1 whole avocado (the bigger the better), 1/3 cup almond milk, 1/2 a chili, a squeeze of lime and a pinch of salt
- Blend until creamy
- Place in to a pretty serving bowl and decorate with some more chilli (other options: toasted seeds, toasted coconut flakes, chopped sping onion)

I made a version of these goujons tonight. Thank you for the inspiration! I love the way you photograph each part of the process. It gives me so much more confidence. I used coconut flour mixed with ground almonds, garlic salt, Himalayan salt and pepper and a few sunflower seeds for my ‘breadcrumbs’ and it was delicious! So filling! I had mine with sweet potato chips and half an avocado.
