How amazing was the weather this weekend?! We hardly spent a moment inside. I’m off to Cornwall next weekend with a close friend and her family so I’m hoping the sun will follow us down, I can’t wait to enjoy the sea air and hopefully sample some of the renowned Cornish seafood! Spending most of the weekend in the garden and parks I decided to trial a completely new idea- which luckily ended up working perfectly especially for the summer setting! Made with just egg, spinach, basil and toasted seeds, these rolls are light, fluffy and filling. I filled ours with roasted ham leftovers, vine tomatoes, homemade guacamole and cucumber. However, these would be perfect with any filling combination so would work for vegetarians too. They would be perfect for a kid’s or adults lunchbox / picnic in the park or even as a healthy snack on the go.
What you need:
To make 10 rolls
*4 eggs
*handful spinach
*handful basil
*3 tbsp toasted seeds
*pinch of salt
*pinch of pepper
- Preheat oven to 180degrees celsius and place a walled baking tray (I used 31cm/20.5cm) in to the oven (greased with coconut oil)
- Into a mixing bowl add 4 eggs and whisk – put aside
- Place the seed mixture into a pan and toast until golden brown
- Finely chop basil and spinach
- Add all the ingredients in to the egg mixture and combine until full mixed
- Take baking tray out of oven and immediately pour mixture on to it and place back in to oven
- Bake for about 15 minutes until golden brown
Filling
- Place all your filling ingredients horizontally along the length of the egg base in lines- from one side to the other
- Once you have finished roll from the long side to the other and immediately wrap in cling film and place in fridge for 2 hrs to set
- Take out of fridge and discard cling film
- Using a sharp knife, cut in to bite sized rolls and serve with salad or other finger food

I tried this today – it was lovely. I did a BLT filling with the mashed avocado in place of the mayo. Everyone at work was impressed – and I have half the roll left over for tomorrow! The seeds added some lovely crunch too.
