I love cooking and baking and so long as I have no prior plans I tend to spend most of my evenings in the kitchen preparing, baking or making. However sometimes I get home and all I want is something that takes no time at all- but isn’t another omelette! This dish is so quick to make and in less than ten minutes you can have it from pan to plate. If you don’t have a spiraliser for the courgetti then you can use a peeler and peel full length strips. If you do have a spiraliser then get it out and start using it! Spiralising is so much fun and for those who don’t like cooking it certainly makes the whole process more enjoyable! I’ve even been told by some of you that a few vegetable hating children are now enjoying making and then munching up the twizzled and twirled greens! If you are meat eater, then feel free to add in chopped sausage / bacon or some chicken or even some prawns…
What you need:
To serve 2
*2 tbsp dessicated coconut
*2 large courgettes (spiralised or peeled in to strips)
*275g mushrooms, chopped (I like to use Portabella mushrooms)
*3 garlic cloves, finely chopped (or 1 tsp garlic pure)
*2tbsp olive oil
*5 spring onions, chopped
*1/2 a lemon (or 2 tbsp lemon juice)
Directions:
- In to a deep wok over heat place the olive oil and allow it to heat up. Throw in the spring onions and garlic and coat in the olive oil, fry off for a couple of minutes until soft
- Add in the mushrooms and wok for a further 2 minutes until turning a golden brown colour
- Add in the desiccated coconut and mix in
- Take the mushrooms off the heat and set aside in a bowl
- To heat the courgetti through (1-2 mins): In to the same pan add in 1 tbsp olive oil and the courgetti, move it around with a wooden spoon / spatula- as you do not want the courgettes to lose too much water or stick. Add in the lemon juice and a bit of sea salt. Remove from the heat and straight on to a plate
- The mushroom and garlic mix should still be hot so serve straight away on top of the courgetti / or mix in to the courgetti in the wok and serve
