This weekend we headed to The Allergy and Free From Show at Kensington Olympia. It was one of the best and most interesting shows I have ever attended. Not only were there a huge array of companies showing off their latest innovations from 4 ingredient Paleo cereal bars (no dairy, gluten or nasties), to hypoallergenic beds, super allergy prevention hoovers and 100% natural make up. There were free massages, demonstrations, talks and samples everywhere, a thoroughly well organised event.
As we entered there was a stand doing allergy testing so I decided to pay the £40 fee and allow my finger to be pricked and my blood tested. After an hr of wandering around we headed back for the results. It turns out I am 100% intolerant to cows milk, so although I have been so careful at being dairy free these past few months, I realise that even the smallest slip up has left me feeling really unwell and now all the bloats, cramps and nausea I have had makes a lot more sense. So, I have gone through the food and medicine cupboards and set aside anything with added lactose/ dairy- it’s surprising just how much it’s used in even the most bizarre things!
So I’m going to have to be a lot more wary of meals which I have, until now, always been really lenient with. However given how sick “cheating” has made me recently I don’t think it’s worth the pain as discomfort!
On our way back from the show we picked up a couple of discounted Lochmuir salmon fillets from Marks and Spencer so I thought I would share the recipe with you. I baked the salmon with ginger, lemon, garlic and olive oil and then served it with some homemade sweet potato mash, wilted spinach and fresh green tiger tomatoes.
What you need:
For 2 people
*2 salmon fillets
*4 garlic cloves
*1/2 tsp pepper
*1/2 tsp salt
*2 inch cube ginger
*2 tbsp olive oil
- Preheat oven to 180°c
- On a large piece of foil place 2 tbsp olive oil and place salmon fillets on top
- Rub fillets in the oil and cover with the ginger, garlic cloves, salt, pepper and lemon juice
- Seal up the tin foil from all sides and place in oven for 20 minutes to bake
- Take out of the oven and serve straight away
*Note: you might have to bake for longer for larger fillets
