The simplest ingredients for one of the most delicious dishes. This dish is so quick and easy, with ingredients that you could pick up from any local supermarket. There’s not a complex carb in sight and it will make little or no impact on your blood sugar but leave you feeling immensely satisfied. I recently made a friend a pistachio pesto courgetti dish, it worked so well that I decided to make this pesto with pistachios too. I find that they are more flavoursome than pine nuts and create a good crispy shell to the cod, they are cheaper too- which is always a bonus
What you need:
For 2 dishes
Preparation times: 10 minutes
Cooking time: 15 minutes
*70g pistachio nuts
*1 packet flat packed basil
*1/2 cup olive oil or coconut oil (plus a little extra for greasing the dish)
*2 garlic cloves
*1/2 tsp sea salt
*2 pieces cod
Directions:
- Pre-heat the oven at 180°
- Place the basil (whole leaf), olive oil, salt, garlic and pistachio nuts in to a blender and blitz until broken down with a sauce like texture
- In to a greased deep-set oven dish place your cod and spread approximately 2 tbsp pesto on to the top of each piece (if you have any left over put it in to the fridge to have with another meal!)
- Place in to the oven for around 15 minutes until the top has browned and cracked slightly and the cod has cooked through
- Serve straight away with a side salad, sweet potato chips or sautéed mushrooms
