Today, Paleo With Mrs P is officially one year old. I can’t quite believe how quickly the time has flown and looking back over the last year it’s been quite a journey since I first, very nervously, posted my first ever blog. Since then I have shared 106 recipes and my little kitchen has remained one of my closest companions. I have lots of exciting things coming up and I just can’t wait to share the next phase with you all!
It’s so important that we look after our bodies and give them the nourishment they deserve and it’s amazing what a difference just eating the right type of food, real food, can have on the body and mind. So with summer just around the corner (hopefully), I have been creating lots of health friendly, quick and light recipes for the whole family that are cost friendly too! I completely understand and appreciate that eating a diet full of “grass-fed” meats, “activated nuts” and “organic vegetables” can be a real pinch on the purse strings, especially if you have more than just yourself to feed! I really try to make my dishes as accessible as possible with not too many costly ingredients!
The dish I have decided to share today is apple and sage pork meatballs. Aimed at a hungry family of four; this is a very simple dish, perfect for dinner, lunch, picnics or bbq’s. Served cold or hot, these meatballs are flavour packed, hold together well and keep in the fridge in a sealed container for up to 3 days. You have to be prepared to get your hands a little dirty but it is certainly worth it! I recommend buying pork mince from the butcher but as an alternative you could also use gluten-free sausage meat if you wanted. I served ours on a bed of wilted kale wok’d in coconut oil with some roasted peppered squash, a squeeze of lime and some Meridian tahini dressing.
- 500g Lean Pork Mince
- 1 Cooking Apple, skin off, grated
- 1 tsp Salt
- 2 tsp Paprika
- 2 tsp Dried Sage
- 1 tsp Sea Salt
- 1 Medium Red Onion
- 1 Garlic Clove
- 1 Large Egg
- 100g Ground Almonds
- 1tsp Ground Pepper
- ½ Lime
- OPTIONAL: Tahini for dressing
- Pre-heat oven to 170°c
- On to a plate place the ground almonds and pepper and mix together (this will be used later)
- In to a food processor place pork mince, grated apple, salt, paprika, dried sage, red onion, garlic clove and large egg and blitz until fully combined
- With clean hands, roll in to balls (about 1tbsp per ball) then transfer to the ground almond / pepper mix and roll carefully until coated (this is v important as this will keep them held together when frying)
- Place on to a baking sheet / plate
- Over high heat place a deep frying pan with 2 tbsp coconut oil, allow to melt
- Place balls in to the pan gently and fry off on each side until golden brown
- Once golden brown place in to the oven for approximately 15 minutes until fully cooked through
- Serve on a bed of wilted kale, butternut squash with a drizzle of tahini dressing and a squeeze of lime
These look very tasty. On a completely different side note, do you have any recommendations for a decent wok? I have a ceramic hob, not gas.

Hi Debbie, sorry for my late response. I would personally suggest Tefal as a good range. I have this wok which was by Jamie Oliver for Tefal and has been utterly brilliant for the last 3 or so yrs. http://www.johnlewis.com/jamie-oliver-hard-anodised-wok-dia-30cm/p1789566 Any of the Tefal range will be good and trustworthy and affordable. Otherwise I would suggest Le Creuset but they are double the price! However- my mum has one from 25 yrs ago and still uses it!! Hope that helps! 🙂

These meatballs are SOOOOOO yummy! They’re great for breakfast, lunch, or dinner. I used chicken and pork, and I can’t use almond meal because my daughter (who loves these) is allergic. Instead, I mixed a little flaxseed meal and coconut flour into the meatballs themselves, and they held together beautifully. This one is a keeper!
