Sorry for the lack of recipes recently, time seems to be flying and I’m feeling more pregnant by the second! I have lots of new things coming up for you guys over the next few weeks and am currently in the process of starting a little YouTube channel too with a few recipes and a little pregnancy chat. I’m not sure exactly when I’ll launch it (combination of nerves and hating the sound of my own voice) but I’ll keep you updated!

I haven’t really had a huge appetite my whole pregnancy, especially compared to what I used to have. However, I have been lucky in that the only real craving I’ve had so far has been olives- and that is only in the last week or so! Having Type 1 diabetes and for the health of my little womb lodger, I have remained as healthy as possible throughout my pregnancy and thus far have gained very little weight (other than baby etc) and not had any funny blood / vitamin deficiency results. I’ve stuck to a mostly low carb / high fat diet as that’s what works best with my sugar levels and insulin requirements with lots of eggs, avocado, leafy greens, almonds, seeds, spices, chicken, fish, dried prunes (for fibre) and berries. I also found that on the few occasions I have had nausea (since my dramatic first trimester) that a small meal of fat and protein really helped to curb it.

The recipe I’m sharing today is a great snack, or salad / curry  / stew accompaniment. I usually make up a batch or around 12-14 and keep them in the fridge or reheat in the oven. They are very simple (and messy) to make, but use simple ingredients and are great for picnics, train journeys, or just a snack on the go. If you don’t like sweet potato then you can always swap it for parsnip, carrot or squash. For those who like to know, there are about 11g carbs per ball (based on the recipe making 12). For an Asian inspired twist, I seriously recommend dipping them in some coconut amino  , a salty and tangy sauce with a slightly sweet aftertaste.

Sweet Potato Sesame Bites

Simple, low-carb sweet potato sesame bites packed with flavour, texture and goodness.

Ingredients
  • 400g Sweet Potato (approx 2 )
  • 1 Large White Onion (250g)
  • 1 Handful Fresh Coriander Leaves
  • 80g Sesame Seeds
  • 1 Large Egg
  • 1 tsp Ground Cumin
  • ½ tsp Sea Salt
  • Pinch Cayenne Pepper (optional)
  • Pinch Pepper
Instructions
  1. Peel and cube sweet potato
  2. In to a pan of boiling water place the sweet potato and cook until soft
  3. Drain of water and allow to cool (to speed this up fill pan with cold water and allow to sit in the water until cold)
  4. Pre-heat oven to 190°C / 375°F
  5. Dice onion and roughly chop coriander
  6. In to a mixing bowl place sweet potato and mash, add in raw onion, coriander, cumin, sea salt and pepper. Mix in until fully combined
  7. In to a separate bowl crack egg and whisk
  8. On to a flat and clean surface pour sesame seeds
  9. Now using roll a ping-pong sized ball of mixture between your hands, dip in to the egg mix and then carefully roll in the sesame seeds (if you find this too messy, then roll all the balls and dip in the egg mix and then just sprinkle the sesame seeds on top, roll them over and repeat)
  10. Repeat until all the balls are coated, placed on a greased baking sheet and pop in the oven for 40 minutes
  11. Check on them after 20 minutes and then every 10 minutes until golden
  12. Once cooked carefully remove from the oven and allow to cool - or serve straight away
  13. These can be kept in an air tight container in the fridge for up to 4 days and reheated or eaten cold
