Simple Blueberry Breakfast Slice

I am so sorry for my absence these past couple of weeks, I hope you will forgive me, I feel we have a lot to catch up on! Last week Ports and I took a trip to Annecy in the Rhône-Alpes region in south-eastern France followed by a couple of days visiting my brother in Switzerland. It was a wonderful few days, the weather in Annecy was sheer perfection complete with colourful old town, lake and beautiful mountain backdrop. It was an incredibly active place, everyone seemed to be doing something from walking along the lakeside, to canoeing and I even saw some very brave mummies rollerblading with their buggies! Needless to say Ports and I stuck to solid ground! There was an amazing market on the Friday which went on and on down the cobbled streets, so much fresh and colourful produce, I found the whole place very inspiring. Unfortunately Lausanne didn’t have such great weather and a mist hung over lake Geneva for 3 days solid so we were unable to see the Alps on the other side, but it was wonderful just catching up, playing scrabble and doing lots of walks (Lausanne is possibly the hilliest place I have ever been to!). Would you believe, I took my Nutribullet away with us too so that I could have something other than Pain au chocolat every day!  It worked so well and I was able to have a berry packed smoothie most days with spinach and coconut water added in.

On a separate and very exciting note,  you might have noticed that the blog layout has all changed and I have a wonderful new illustration which I am mighty proud of! I have been working closely with Angie from Angie B Studio for a couple of months now and she has done all the illustration and beautiful creative changes to my blog and along with her wonderful partner Matt (web designer genius ) have gone way above and beyond my original vision. So I hope that going forward my blog will be easier to access and I am looking forward to sharing lots of new and exciting posts!

I have wanted to share this recipe with you for a while as it’s so quick and simple to make and the perfect breakfast to share! It’s light in texture with a moreish bite to it and the blueberries add sweetness. For those of you with a particular sweet tooth feel free to add some maple syrup, raw honey or date syrup!

Simple Blueberry Breakfast Slice

A quick and simple nutrition packed blueberry breakfast to share!

Serves: 2-4
Ingredients
  • 1 cup blueberries
  • 1 tbsp coconut flour
  • 3 large eggs
  • 1tbsp water
  • 1 pinch sea salt
  • 2 tsp coconut oil
  • Mapel syrup (raw honey, date syrup, coconut sugar etc) for sweetening once cooked
Instructions
  1. Pre-heat oven to 180°c / 356°F
  2. Pop pan over high heat and allow coconut oil to melt
  3. Drop in ¾ of the blueberries and allow them to start sizzling (they will spit so DON'T WEAR WHITE)
  4. In a bowl whisk your eggs, water, coconut flour and salt together. Whisk for 2-3 minutes until all mixed together and no lumps (keep going until no more lumps) , it will resemble custard
  5. Pour mixture carefully on top of the blueberries and tip the pan until everywhere is covered
  6. Drop in the remaining blueberries
  7. Leave for 3-4 minutes until the underside is completely cooked (the sides will start curling up)
  8. Now place in the oven for about 4 minutes until the top is firm
  9. Drizzle a generous amount of mapel syrup on top and serve with some crushed nuts
