Description

In 2005 I was diagnosed with t1 diabetes. At 17 yrs old my world changed in an instant. Over a few months I was told by 3 separate dietitians and a carb counting course that a healthy, balanced diet was the way forward. One that focused on slow releasing carbohydrates, low fat and a little protein. Suggested for breakfast was a bowl of oat porridge with skimmed milk, sliced banana and a drizzle of honey. Insulin was there to give me independence to eat “anything” I wanted. As such, for 8 years I lived on a constant blood sugar rollercoaster and never achieving a semblance of control.

Then in 2013 everything changed, when I realised that by making a few changes to the foods I was eating and by reducing the amount of carbohydrates, I was able to achieve control over my blood sugars like never before. Blood sugars that felt totally unachieveable. Blood sugars that reflect non- diabetic control and would help me have 2 healthy pregnancies and feel so well.

Low carb isn’t a cure, but it has helped me feel more in control of my condition and enjoy food like never before.

So, whether you are diabetic, coeliac or just want a healthy, high fibre breakfast, then this porridge is for everyone; my children adore it! Breakfast should be enjoyable and make you feel good and this will hopefully do just that!

Directions:

You have several options:

Microwave: Add milk to 35g porridge and microwave for approximately 30-45 seconds. Stirring a couple of times until hot. Add more milk if needed.

Pan: In to a pan over a medium-high heat, add 35g porridge and 180ml milk. Bring it to a bubble and cook for 4-5 minutes until thick. Using a wooden spoon to stir. Add a little extra milk if it is too thick for you.

Instant: Warm some milk and pour over your porridge. Stir. Let it stand for 4 minutes before thick.

Serve straight away with your choice of toppings.
