It is with great excitement that I have launched my first e-book, which is available Worldwide. I was fortunate enough to be published last November with my first hard copy book The Low-Carb Diabetes Cookbook. Since then so much has happened and it has been quite a journey. I have been desperate to carry on writing and although there have been lots of doors opening, many have also remained shut and things have been somewhat slow.

I adore the audience I have and can honestly say I have made friends for life through the contacts I have made through my website /  talks I have done, cookery classes and bread in a bag. Hugely grateful to be able to share my passion with those around me.

6 weeks ago I decided to bite the bullet and write an e-book. I asked my readers what they’d like to see and made a list of the most popular items. It’s not something I have ever done before but I took on the task and I am so thrilled that I did because now I have a brand new ebook to share with you all. A 52 page PDF, which you can save to your phone / computer and do what you like with it. It was launched on Saturday and many have already printed and bound it to use at their leisure.

I spent a long time testing each of the 23 recipes , adapting them where I could to suit various dietary needs and taking the photos. So they are all grain-free and gluten-free. Many are nut free and there are plenty of dairy free options too. It is a book with the whole family in mind and I promise, not a cauliflower as a substitute in sight (even though I love cauliflower).

I realise what a hard time Christmas can be. Especially if you have diabetes. I used to go through Christmas saying “well, it’s Christmas” whilst guzzling all the carb filled treats, drinks and dishes. But in hindsight, it was just ruining my health with higher sugars that made me feel awful. Hopefully this ebook will come as a welcome relief to so many of you, as the recipes are all very low carb, delicious and some great twists on Christmas classics.
