Simple and delicious "no bake" chocolate orange and chia energy balls. These are high in protein, antioxidants, omega 3 and fibre. Perfect for those on the go and can keep in the fridge / freezer for weeks!
140g Medjool dates (weighed before the pits are removed)
100g pecan nuts
Pinch of salt (this can be optional)
Instructions
In to the food processor place the pecan nuts and dates, pulse for 1 minute until paste like consistency
Now add in the orange zest, almond butter, chia seeds and cacao
Blend until fully combined for about 3-4 minutes
Once mixture is sticky, roll in to bite sized balls
Optional: Add 1-2 sea salt flakes to the top of each ball
Decorate accordingly. I like to roll half the batch in extra chia seeds and the other half I put a pecan nut on!
Place in to freezer for 1-2 hrs to set, then remove and keep in the fridge in a sealed container (or you can leave them in the freezer until you want them)
Notes
It storing in the freezer make sure to take them out 1 hr before serving (as they will be very very hard)
