Baked salmon with ginger, lemon and garlic

This weekend we headed to The Allergy and Free From Show at Kensington Olympia. It was one of the best and most interesting shows I have ever attended. Not only were there a huge array of companies showing off their latest innovations from 4 ingredient Paleo cereal bars (no dairy, gluten or nasties), to hypoallergenic beds, super allergy prevention hoovers and 100% natural make up. There were free massages, demonstrations, talks and samples everywhere, a thoroughly well organised event.

As we entered there was a stand doing allergy testing so I decided to pay the £40 fee and allow my finger to be pricked and my blood tested. After an hr of wandering around we headed back for the results. It turns out I am 100% intolerant to cows milk, so although I have been so careful at being dairy free these past few months, I realise that even the smallest slip up has left me feeling really unwell and now all the bloats, cramps and nausea I have had makes a lot more sense. So, I have gone through the food and medicine cupboards and set aside anything with added lactose/ dairy- it’s surprising just how much it’s used in even the most bizarre things!
So I’m going to have to be a lot more wary of meals which I have, until now, always been really lenient with. However given how sick “cheating” has made me recently I don’t think it’s worth the pain as discomfort!

On our way back from the show we picked up a couple of discounted Lochmuir salmon fillets from Marks and Spencer so I thought I would share the recipe with you. I baked the salmon with ginger, lemon, garlic and olive oil and then served it with some homemade sweet potato mash, wilted spinach and fresh green tiger tomatoes.

What you need:
For 2 people

*2 salmon fillets
*4 garlic cloves
*1/2 lemon
*1/2 tsp pepper
*1/2 tsp salt
*2 inch cube ginger
*2 tbsp olive oil

 Directions:

  • Preheat oven to 180°c
  • On a large piece of foil place 2 tbsp olive oil and place salmon fillets on top
  • Rub fillets in the oil and cover with the ginger, garlic cloves, salt, pepper and lemon juice
  • Seal up the tin foil from all sides and place in oven for 20 minutes to bake
  • Take out of the oven and serve straight away

*Note: you might have to bake for longer for larger fillets

Salmon health benefits:

  • OMEGA 3 AND CARDIOVASCULAR HEALTH: Salmon is rich in Omega  3 which can help keep the heart healthy and prevent against cardiovascular disease. It can also decrease the risk of arrhythmias (abnormal heartbeats) which can lead to sudden death. Omega 3 also decreases triglyceride levels and helps to lowe blood pressure
  • MENTAL HEALTH: The Omega 3 fatty acids along with strong levels of Vitamin A, D, Amino Acids and Selenium help your brain and memory to improve. They also protect your nervous system from deteriorating effects of aging. This therefore makes salmon work as a natural anti-depressant. The consumption of salmon has in fact been shown to lower your risk of developing Alzheimer’s and Parkinson’s diseases
  • METABOLISM: The health benefits of eating salmon can help to speed up your metabolism. This can also help your glucose absorption rate and help to lower blood sugar levels which in turn helps to prevent type 2 diabetes
  • JOINT PROTECTION: Salmon peptides – including calcitonin – may help (along with omega 3 molecules) to provide unique anti-inflammatory benefits for the joints
  • EYE HEALTH: Salmon can help to decrease the risk of two eye-related problems: macular degeneration and chronic dry eye. Just two servings of fish per week have been shown to significantly decrease the risk of both problems
  • CANCER PREVENTION: Intake of fish rich in omega-3 fat can help prevent against several types of cancer. These cancer types include colorectal cancer, prostate cancer and breast cancer. Some of the strongest findings for decreased cancer risk following regulate intake of omega 3 fish involve the blood cell or lymph cell-related cancers including leukemia, multiple myeloma, and non-Hodgkins lymphoma
